Country girls
Country loaves known as Tourte d’Auvergne, made of 100% rye flour using an age-old method quite unlike any other in modern bakery. The dough is mixed with hot water up to 80-90% hydration so it resembles wet cement. Too wet to be handled, this dough is proofed in linen-lined baskets and then turned directly onto the hearth, where the crust cracks in beautiful freeform patterns.
