Some friends who own a restaurant have recently imported a batch of pecorino canestrato cheese from Italy.  It’s a hard, ewe’s milk cheese from the south, molded in a basket, hence the name. It is aged for roughly a year and acquires a strong flavor which reminds me of the forest floor.

We thought it would be perfect for adding to bread and indeed it is fabulous.  The smell from the oven went out into the street. It made the neighborhood dogs bark in delight, and the moon smile…
